Turkey Chili


This is a healthier version of an old favorite.
Rating: 2 Stars. Alex and I are the only Chili lovers...

Ingredients:

2 medium onions, Chopped (1 cup)
1 Tablespon vegetable oil
1 medium red bell pepper, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
2 tablespoons chopped garlic
2 pounds ground turkey
2 tablespoon gound cumin
1 tablespoon dried oregano leaves
1 tablespoon chili powder
1 can (4 oz) chopped green chilies, drained (optional)
1 can (14.5 oz) diced tomatoes
About 4 cups water
1 can (15 oz) black beans, drained
1 can (15 oz) kidney beans, drained
Salt
Pepper

Directions:
Cook onions in oil in large pan over medium heat about 10 minutes until tender. Add green and red bell peppers and garlic; cook 2-3 minutes. Add turkey; cook 4-5 minutes until turkey is no longer pink. Add cumin, oregano, chili powder, green chilies, tomatoes and water; reduce heat to low. Cover and simmer about 30 minutes.

Add beans; simmer 15-20 minutes longer (thin chili to desired consistency if necessary with additional water). Season with desired salt and pepper.

Serve with grated cheese and corn bread!
